Crockpot Refried Beans

Crockpot Refried Beans

  • 1 lb. dry black or pinto beans

  • 1 medium onion diced

  • 1 or 2 medium jalapeños diced

  • 2 cloves garlic minced or 1 heaping tsp minced garlic

  • 1 tsp cumin 

  • 2 tsp chili powder

  • 1 tsp Adobo light all purpose seasoning  

  • 2-3 tsp salt

  • 1/2 tsp onion powder

  • 1/4 tsp ground cayenne pepper, turmeric, & paprika

  • 1/8 tsp coriander, curry, & Vietnamese cinnamon

  • 12-16 cranks cracked black pepper  

  • 6 cups water 

Rinse dried beans well, remove any stones and or bad pieces.

Place all ingredients in crockpot and mix. Cook on high for 5 hours or low for 8 hours.

When beans are finished cooking place half of the beans with some of the water in a blender or food processor. Blend until creamy. Add water from crock pot if necessary. Repeat process with other half. -Or- Remove about a cup of the water from the crock pot and mash with potato masher until creamy adding in removed water if necessary.

Great alone or in tacos, on tostadas, in nachos, the possibilities are endless! Enjoy!
