Sweet Potato Skins Bacon

  • Skin of 3-4 sweet potatoes

  • 2 tablespoons Coconut aminos

  • 2 teaspoons maple syrup

  • 1/4 teaspoon liquid smoke

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon fresh ground pepper


Mix all ingredients minus sweet potato skins , then mix in sweet potato skins.  Marinate in air tight container in fridge for at least 3 days up to a week.  I wait a week.  Then cook over medium heat in a greased skillet, stirring often until golden brown! Keep a close watch they burn easily!
