Kicking Stew
1 Tbsp extra virgin olive oil
1 small onion chopped
3 cloves of garlic minced
2 tsp smoked paprika
2 tsp onion powder
2 tsp thyme
1 tsp chili powder
1 tsp Adobo light all purpose seasoning
1 tsp oregano
2 bay leaves
1/2 tsp red pepper flakes
1 cup carrots chopped
2 cups of jackfruit(seeds removed) or plant based chicken or plant based ground beef
4 cups vegetable stock
1- oz can of chickpeas or cannellini beans
2 cups russet potatoes chopped
1 cup cherry or grape tomato chopped
Warm oil in a large pot. Add onion and cook until translucent. Add in garlic and carrots cook another minute. Stir in spices then add jackfruit. Add in vegetable stock and bring to a boil. Lower heat and simmer for 40 minutes. Add in potatoes and cook until soft(about 15 mins). Remove bay leaves. Take drained beans and a couple ladles of broth and blend in blender. Then stir into stew. Remove from heat and add tomatoes. Enjoy!
