Kicking Stew

  • 1 Tbsp extra virgin olive oil

  • 1 small onion chopped

  • 3 cloves of garlic minced

  • 2 tsp smoked paprika

  • 2 tsp onion powder

  • 2 tsp thyme

  • 1 tsp chili powder

  • 1 tsp Adobo light all purpose seasoning

  • 1 tsp oregano

  • 2 bay leaves

  • 1/2 tsp red pepper flakes

  • 1 cup carrots chopped

  • 2 cups of jackfruit(seeds removed) or plant based chicken or plant based ground beef

  • 4 cups vegetable stock

  • 1- oz can of chickpeas or cannellini beans

  • 2 cups russet potatoes chopped

  • 1 cup cherry or grape tomato chopped

Warm oil in a large pot. Add onion and cook until translucent. Add in garlic and carrots cook another minute. Stir in spices then add jackfruit. Add in vegetable stock and bring to a boil. Lower heat and simmer for 40 minutes. Add in potatoes and cook until soft(about 15 mins). Remove bay leaves. Take drained beans and a couple ladles of broth and blend in blender. Then stir into stew. Remove from heat and add tomatoes. Enjoy!
