Quick Skillet Plant Based Mac & Cheese

  • 2 Tbsp plant based butter

  • 1 shallot minced or 1/4 cup onion minced

  • 2 cups small macaroni or shells

  • 2 cups vegetable broth

  • 2 cups of your choice or shredded plant based cheese

  • 2 Tbsp plant based milk

 In large skillet melt butter and add shallot or onion. Cook for about a min and add the pasta. Cook for another minute then mix in 1 cup of the vegetable broth & simmer on low heat. Check pasta when broth has evaporated, add remaining broth. When pasta is done mix in cheese and milk until cheese has meted and mixed in with the broth. Enjoy!
