Lentil Curry

  • 2 Tbsp your choice of oil

  • 1 medium onion chopped

  • 2 bell peppers chopped

  • 3 cloves of garlic minced

  • 2” piece of ginger grated

  • 1 Tbsp red curry paste

  • 2 tsp chili powder

  • 2 tsp turmeric

  • 1 tsp Adobo light all purpose seasoning

  • 1 tsp cumin

  • 1 tsp curry powder

  • 1/2 tsp cayenne pepper

  • 1 cup of dried lentils

  • 2 cups vegetable broth

  • 1-13.5 can of coconut milk

  • 1 cup chopped spinach or kale or chard

  • 2 Tbsp lemon or lime juice

In a large skillet on medium heat warm oil then add onions. Cook for about 2 minutes.

Next add peppers, garlic, and all other spices. Cook for 5 minutes.

Then add the lentils and broth and bring to a boil. Lower heat and simmer 15-20 minutes or until the lentils are tender.

Stir in the coconut milk then add chopped greens. Cook for five minutes. Remove from heat and add lemon or lime juice. Enjoy with your choice of steamed or roasted veggies and rice!
