Plant Based Tom Ka Soup

  • 4 cups vegetable stock

  • 2” piece of ginger diced

  • 2 Tbsp lemongrass chopped

  • Juice from 2 limes

  • 4 Tbsp coconut aminos or soy sauce

  • 2 Tbsp sriracha

  • 1- 13.5 oz can of coconut milk

Bring vegetable stock, ginger, and lemongrass to a boil in a pot.  Lower heat and simmer for a half hour.

Add and mix in remaining ingredients bring to a simmer and serve.  Enjoy!

This soup is great alone or try it with roasted or steamed veggies, rice, quinoa, or plant based chicken.
