Plant Based Broccoli Cheese Soup

  • 2 Tbsp oil

  • 1 small onion chopped

  • 2 stalks of celery chopped

  • 2 carrots chopped

  • 2 cloves of garlic minced

  • 1 tsp Adobo light all purpose seasoning 

  • 5-6 cranks of fresh black pepper

  • 4 cups of vegetable broth

  • 1 head of cauliflower removed from stalk and brake into small pieces

  • 2 cups of fresh broccoli cut into bite pieces

  • 1 cup of non dairy milk

  • 1- 15.5oz can of cannellini beans drained and rinsed

  • 1/2 cup nutritional yeast

Add oil to a large pot on medium heat.  Add chopped onions.  Cook until translucent.  Add and mix in chopped carrots and celery.  Stir and cook a few minutes.  Add and mix in chopped garlic and stir one minute.  Add and mix in Adobo and fresh ground pepper.  Add and mix in vegetable broth.  Bring to a boil.  Lower heat to a simmer.  


Add and mix in broccoli.   Place steam basket on top and put cauliflower in the stream basket.  Cook with lid on until cauliflower is tender.  

Remove cooked cauliflower and steamer basket.  Place cauliflower with a couple ladles full of broth into a blender.  Blend until smooth and mix back into soup.  Bring back to a simmer.  While soup is coming back to a simmer add canellini beans and non dairy milk to the blender.  Blend until smooth and mix into soup.  Bring to a simmer again. Add and mix in nutritional yeast and serve.  

Add in your favorite plant based cheese or chicken.  Also goes great with rice or steamed potatoes!  Enjoy!
